Prawn, Mango & Avocado Salad

This simple salad is perfect for a healthy summer lunch or light evening meal. It is a taste explosion with the contrast of sweet and spicy. The following recipe serves 2.


A handful of fresh prawns
2 Mangoes, cubed
Rocket leaves
Lettuce leaves
1 Avocado, cubed
1/4 Cucumber, sliced

For the Dressing: 
1 Red chili, finely chopped
A small bunch of coriander leaves
Juice from 1 lime

1. Toss salad leaves, avocado, cucumber, mangoes and fresh prawns in a large bowl. 

2. Combine finely chopped chili, lime juice and coriander to dress, serve and enjoy!
