Spicy Bruschetta

Bruschetta is an Italian antipasto (starter) which consists of toasted Italian bread drenched in olive oil and garlic served typically with tomatoes. This is one of my favourite starters to make as it is delicious and everyone I serve it to are always mesmerised by the flavours. Serve this recipe as an impressive starter or eat it for a tasty lunch. This recipe serves 4.


1 French Stick
Olive oil for drizzling
6 garlic cloves, finely chopped
1 tube of tomato puree
1 ball of mozzarella cheese
150g grated cheddar cheese
Sun Dried tomatoes, halved.
2 Tbsp dried basil
2 Tbsp Chilli Flakes
Salt & pepper for seasoning

1. Chop the French stick so that it is around 3cm thick. Toast lightly under the grill on one side at 180c.

2. Turn the sliced bread over and generously drizzle olive oil over the top and then share out the chopped garlic and rub into each slice.

3. Spread a plentiful amount of tomato puree onto each slice then add chunks of mozzarella.

4. Next sprinkle cheddar cheese evenly over each piece, then add 1 piece of sundried tomato to each slice.

5. Evenly distribute the dried basil and chilli flakes over each piece and season with salt and pepper.

6. To finish, toast under the grill until the cheese has melted and the edges of the bread are golden.
